Avocado Fries with Spicy Dip


My husband’s brother and his wife live in beautiful San Diego, blessed by almost perfect weather year round.  In addition, they are blessed with avocado trees that produce a bountiful crop each year; however, my sister-in-law has said, “There is only so much guacamole that you can eat.”  They were pleased to see my recipe for avocado banana muffins, and I’ve taken on the job of finding other recipes that they can use for their bumper crop.  When I saw a recipe for avocado fries with a spicy dip, I was intrigued.  I wouldn’t have thought an avocado would stand up to cooking, but they do, and the resulting fries are delicious and unlike any fries I’ve ever had.  Most of us can’t live in San Diego, but we can all enjoy these.

Avocado Fries with Spicy Dip

Serves 4

Spicy Dip:

Ingredients:

  • 8 cloves garlic minced
  • Approximately 2 tbsp EVOO (extra-virgin olive oil)
  • ¾ cup sour cream
  • Tabasco Sauce to taste
  • Lime juice to taste
  • Salt to taste

Directions:

  1.  Sauté minced garlic in EVOO over medium heat until you can smell the fragrance.
  2. Put in small bowl, and mash as you combine with sour cream, Tabasco, lime juice and salt.

Avocado Fries:

Ingredients:

  • 4 very slightly soft avocados
  • 3 cups panko bread crumbs
  • Approximately ½ cup flour
  • 3 eggs beaten
  • Approximately ¾ cup freshly grated Parmesan cheese
  • Salt & pepper
  • EVOO

Directions:

  1. Remove avocado flesh from skin and slice into “fries.”
  2. Dip each slice first into flour, then into beaten egg and then into bread crumbs that have been mixed with the Parmesan
  3. Fry in approximately ¼ inch EVOO until nicely browned.
  4. Serve with dip.

  2. These sound yummy! I bet the creaminess of the avocado and the crispness of the breading must be unbelievable. Wow! You find some great recipes.
