Nellie and Joe’s Famous Key West Lime Juice

The long-awaited box of Nellie and Joe’s Key lime juice arrived last week, but I didn’t have time to try any of it until the weekend.  Overlooking the small print that said it is double-strength, I used the amount I had with regular lime juice in my pots de creme.  The result was an exceedingly tart Key lime pie!  Amazon.com (from which Nellie and Joe’s can be ordered) gives a number of glowing user comments , so it seems to be an excellent product.

Nellie and Joe’s Key Lime Pie

Ingredients:

  • 1 nine inch graham cracker pie shell
  • 1 14-oz. sweetened condensed milk
  • 3 egg yolks
  • 1/2 c. Nellie and Joe’s Key West Lime Juice (double strength)

Directions:

  1. Combine milk, egg yolks and lime juice – blend until smooth.
  2. Pour filling into pie shell.
  3. Bake at 350 degrees for 15 minutes.
  4. Allow to cool 10 minutes before refrigerating.
